This is hysterical! I really admire your stick-to-itiveness and frankly, I'd be interested in the rejected recipes... my older kids might just be tempted by apple burgers.

Dayenu! I'd like the other recipes too, when you have a moment. And, yes - I have experienced the mystery of combining foods they love only to get rejected. So odd.

Ask and you shall receive! The Apple Burger recipe is adapted from "Vegetarian Planet" by Didi Emmons.

Apple Burgers

1 cup minced onion
2 tart apples, grated
1 cup bread crumbs
1 cup wheat germ
1 large green bell pepper, seeded & chopped
1 Tbsp minced fresh ginger
2 cups cooked brown rice
4 oz cheddar cheese, grated (might want to add more - i added this last minute)
3 eggs, lightly beaten
1/2 tsp salt (or more, to taste)
freshly ground pepper, to taste
oil for pan frying

Put the onion in a large bowl. Squeeze the grated apples lightly to remove excess juice, then add them to the bowl. Add bread crumbs, wheat germ, bell pepper, ginger, cooked rice, cheddar, and beaten eggs, and mix well. Season with salt and pepper.

Form patties (she says 1.5-inches thick and you get 4 burgers - i got at least 12, more pancake size burgers...). Place a large skillet over medium heat and add oil. Add patties to pan and cook about 2 to 3 minutes per side, or until lightly browned. Add more oil if needed for subsequent batches.
