Meal Monday
I often think that my kids are the pickiest eaters. Then, I will be with my kid’s friends and my kids start to look like model eaters.
Before I had kids, I used to love to cook and experiment. I have tons of cookbooks and all sorts of cooking utensils and accoutrements for the different kinds of foods. Sushi mats for sushi, crème Brule pans and a torch gun, mini tart pans for berry pies, etc. These days, all of those great cooking tools sit and rest in a great big cabinet in my kitchen.
My kids, ages 10, 8 and 6, eat about four things regularly, with pleasure. Does that sound familiar? My daughter Elana (8), LOVES fresh, hot chicken cutlets. She has made it a tradition every Friday when she walks in through the door from school. I have to have those hot fresh chicken cutlets coming out of the oven for her. This is a kid, who is my pickiest eater, does not like food, but turns down play dates until after she has eaten these chicken cutlets.
As the school year quickly approaches, below is the recipe for Elana's favorite cutlets. Maybe it will become a tradition in your home too. But beware, you will have to be home an hour before the kids come home. I HAVE to be home every Friday by 2pm!! What wouldn’t a mother do for her child?
Breaded Chicken Cutlets
1lb of cutlets
2 eggs
2 cups of bread crumbs
1 T paprika
2 t salt
Canola oil
Canola spray (Pam)
Preheat oven to 415 degrees
Cover the bottom of an 8x11 pan with oil
Beat 2 eggs in a bowl
Clean and butterfly chicken cutlets, and marinate them in the egg
Mix bread crumbs, paprika and salt
Dip each cutlet in the bread crumb mixture and lay in the pan
Spray the top with Pam
Bake at 415 degrees for 25 minutes
I was skeptical about whether this would yield crispy yummy cutlets, but it did! It was much easier, and also probably healthier, than "traditional" cutlets and the clean up was better too. No smoky kitchen, no pan that I am tempted to throw in the trash rather than clean it. This will be on my rotation. I wonder if you can make a bunch of these, freeze them and then just cook at few in the toaster oven as needed.
