I thought I had the recipe for the best cheesecake ever, but I just tried a new recipe that has me rethinking my original assessment.
For the past several years, my favorite cheesecake has been Nick Malgieri’s Sour Cream Cheesecake. This is the classic, old-fashioned, New York restaurant style cheesecake, with a pastry dough crust and a very soft and tangy filling.
Before I made this cheesecake, I thought that the only way to get a soft cheesecake filling was to fold in beaten egg whites. After making this cheesecake, I realized that what makes a cheesecake hard and dense is a low proportion of liquid ingredients in relation to the amount of cream cheese.
Nick’s cheesecake is so soft and creamy: it is fabulous. The thing is, though, that you have to really like the tanginess of sour cream.
For a recent Daring Baker’s Challenge, I tried out a new recipe: Abbey’s Infamous Cheesecake. I made a cheesecake with three layers: chocolate, caramel, and vanilla. Wow! This cheesecake really rocks. It is smooth, soft, creamy, light. It has a nice vanilla flavor and is not too tangy.
The baking challenge was hosted by Jenny of Jenny Bakes, and the Daring Bakers came up with some really creative recipes and presentation ideas.
The original recipe offers some creative choices: Blueberry Lavender, Caramel Café au Lait, Macadamia-Mango-Raspberry-Mandarin orange, Mexican Turtle, Honey Cinnamon with Port Pomegrantate Poached Pears, and Key Lime. Wow! Yum! No wonder that some Daring Bakers made cheesecake cupcakes and flavored each cupcake a different flavor.
