Have you started thinking about holiday desserts yet? Well, I have. I have been thinking quite hard about what I am going to make for Passover.
I like to make a flourless chocolate cake, and my current favorite is Chocolate Nemesis. Frazzled Dad has posted my favorite version of this stupendous chocolate bomb.
It is not dense and hard like some flourless cakes. No, this beauty is and light, like a cross between the best chocolate pudding and best chocolate mousse you ever tasted.
I make this all the time. I mean, really and truly all the time.
But be warned. It is really an intense chocolate experience, especially if you use the best possible bittersweet chocolate. The last time I made it, a friend said, "Oh my goodness, this is so intense, I’m actually sweating."
And you must use the best chocolate that you can find to get the proper texture and flavor. Use extra-bittersweet. When I made it for Passover last year, I used a semi-sweet chocolate, and the texture was a little lighter than usual, although it was still delicious.
To make this dessert non-dairy, just substitute unsalted margarine for the butter. Let me reiterate this point because it is sometimes hard to find this kosher for Passover: use unsalted margarine, people!
It is nice to counterbalance a rich chocolate dessert with something lighter and fruitier. Lemon Angel Pie is a particularly good counterpoint. It is light and bright and sunny looking, in sharp contrast to the rich darkness of the chocolate cake. To make it non-dairy, of course, you will need to use a kosher for Passover pareve whipping cream.
