Meal Monday
I look back fondly at the "Terrible 2s." I think that is because my triplets are in the "Thoroughly Frustrating 3s."
The kids are coming into their own, which is great…in theory. In reality, it is a battle of wills in our house…on three fronts.
Parenting our crew is more exhausting than ever. I can say that with confidence as I have blocked all memories of their infancy. At the end of the day, pretty much all I can do is make dinner and collapse.
So when we have people over for brunch on Sunday morning, preparation begins on Sunday morning. That's why this Crustless Spinach Cheese Pie is a go-to recipe for me.
Crustless Spinach Cheese Pie
Ingredients:
2 10-ounce packages frozen chopped spinach
4 eggs, beaten
6 oz. crumbled feta cheese
1/3 cup small curd cottage cheese
2 Tablespoons grated Parmesan cheese
Preparation:
Preheat oven to 325 degrees.
Spray a 9x9-inch glass baking dish or 9-inch pie plate with cooking spray. Cook spinach according to package directions and drain well. In a bowl, combine spinach, eggs, and cheeses, mixing well. Place in prepared baking dish. Bake uncovered 35-45 minutes. When toothpick inserted in center comes out clean, it is done.
